20. Francois President Brut sparkling wine + Fish tacos with citrus salsa

Which wine 4 today? The François Cellars were founded by Louis and Cézar François – two sparkling masters moved from Reims, from the capital of Champagne to Hungary – in 1886. Now the beautiful sparkling wines are made by László Romsics, Master of  Wine, winemaker with international experiences in Chile, Australia, New Zealand, Spain, Italy, France, Germany, Portugal and California. The President Brut shows light green colors, beautiful bubbles, the pairing food is fish tacos with citrus salsa. The amazing lime and lemon aromas in sniff match with the mandarin and orange salsa. This is a really light and fresh drink with lovely acids and a few gramms of sugar. Enjoy! 🙂

19. Konyári winery Loliense Fehér 2013 + Mini lemon meringue pie

Which wine 4 today? Next to the Balaton lake you can find a great wine region Balatonboglár, where the Konyári winery is located. The second generation winemaker has big international winemaking experience as he traveled to South Africa, Portugal, California and New Zealand for harvests. The chosen wine is Loliense, what has perfumed sniff thank to the Riesling, green capsicum aroma thank to the Sauvignon blanc, butter and vanilla flavor thank to the Chardonnay. The mini lemon meringue pie is pairing with this lovely fresh wine as the prickly, racy acids highlight the creamy citrus cake. Enjoy! 🙂

18. Gere winery Cabernet Sauvignon + Wild rosemary duck with apricots

Which wine 4 today? From the South part of Hungary, Villány wine region I would like to recommend a delicate, strong, fruity red wine. The winery is Gere, the variety is Cabernet Sauvignon. This is an genuine, intense grape variety that is full of flavor. It has beautiful rose, black cherry, smoked meat, black mulberry, dried red blueberry, in the back undergrowth aromas in nose. Its creamy harmonious texture makes it perfect match with flavorful grilled red meats. Wild rosemary duck with apricots is pairing so much with this elegant wine. Enjoy! 🙂

17. Luka winery Madárlátta Merlot + mint merguez dog

Which wine 4 today? I would like to recommend a beautiful red wine from Sopron wine region, from the North-West part of Hungary, next to Austria. The winery is Luka, the wine is Merlot. This is a modern wine for people with good taste and etiquette. I love its rich and elegant style and it is ideal partner for grilled red meats. The pairing plate is mint merguez dog, what is a fresh mutton based sausage in the North African cuisine. The spicy and mint food makes a great match with the leather and red fruits aromas in the wine. Enjoy! 🙂

16. Pfneiszl winery Kékfrankos (Blaufränkisch) + middle roasted beef steak

Which wine 4 today? Pfneiszl winery is great exam to show the beautiful wines from Sopron wine region, from the North-West part of Hungary, next to Austria. Kékfrankos or Blaufränkisch is a variety, what gives varietal aromas with spicy and black berry flavors, furthermore amazing smooth tannins and great body. The middle roasted beef steak is an awesome match with this well balanced, complex wine, the mulberry and oak barrel taste highlight the wonderful texture of the meat. A bit more about the variety: Kékfrankos is same honored in Hungary as Pinot noir in Central Otago in New Zealand. Enjoy! 🙂

15. Chateau Dereszla winery Szamorodni + blueberry orange baby bund cakes

Which wine 4 today? I would like to recommend a really nice sherry style dry Szamorodni Tokaj wine. Chateau Dereszla winery was established by the D’Aulan family, part of the Edonia group. They have three other wineries: two in Bordeaux: Saint Emilion & Saint Estéphe, and one in Argentin: the Alta Vista bodega. The wine 4 today was blended from two varieties as Furmint and Harslevelű, the harvest is with aszú berries and the technology is under yeast film fermentation. The food, blueberry orange baby bund cakes is pairing so much with the nut and almond aromas of the wine. Enjoy! 🙂

14. Erzsébet Estate Lunée + Hennessy spicy sweet chicken wings

Which wine 4 today? I would like to recommend a great semi-dry white wine from Tokaj wine region from Hungary. When you have a spicy food on your plate you can have good wine for pairing, not just beer. I know it is big challenge, but possible. There are some strict rules, what you follow, can enjoy the food and drink match, first avoid the lot of tannins, then the too high alcohol. Look for a fresh light, flower smell white wine. Erzsébet Estate has a great one, Lunée with the extra mint aromas is just so nice. Enjoy! 🙂

13. Weninger winery Merlot + roast duck with purple cabbage and green beans

Which wine 4 today? A really nice Merlot was chose from Sopron wine region, which is on the North West part of Hungary next to Austria. Weninger family winery is managed by the new generation, Franz Reinhard Weninger since 2000. He has several experiences on abroad as in California, Australia and Italy, which knowledge he uses in the high cared biodynamic wine growing as well. This wine has beautiful red berry fruit aromas as cherry and black currant what make nice pair with the purple cabbage. Its lovely acids match with the roast duck, they are not too much, not too little, but just right. I really love Weninger wines as they show that the owner cares a lot about the strict technology process to make the best possible result from the vineyard and variety combination.

12. Sauska Tokaj winery Estate Furmint + Cilantro lime mahi mahi with raspberry and mulberry

Which wine 4 today? I love so much Furmint, and we are still in February celebrating this great variety in Furmint February event and FurmintUSA project. This great dry white wine was produced by Sauska winery in Tokaj wine region. It shows beautiful citrus bouquet making a great pair with the Cilantro lime mahi mahi with raspberry and mulberry. This fish has delicate flavor that is almost sweet matching with the apricot and blueberry aromas of the wine. The 7 months oak barrel aging and the 50% malolactic fermentation made it so beautiful and harmonic. Enjoy! 🙂

11. Homonna Cellar Estate wine (Furmint – Hárslevelű) + Ricotta pecora and spinach ravioli

Which wine 4 today? Furmint Februar event is still on, so I would like to recommend a great Furmint and Hárslevelű blend dry full-bodied wine. Homonna cellar is located in Erdőbénye, in the middle of the Tokaj wine region. This Estate wine has elegant aromas and minerally taste thank to the vineyards limestone soil (Határi and Meszes Major blocks). Ricotta pecora and spinach ravioli is pairing with it, as the citrus smell matches with the spinach and the nice acids highlights the sheep cheese in the plate, they make a fresh complex together. 10. Babiczki winery Chardonnay battonage + scoglio seafood pasta

Which wine 4 today? Babiczki winery is located in Mátra wine region in Hungary on the North from the capital, Budapest. László Babiczki won the youngest winemaker award in 2004, since then he grows continuously carefully wines. The Chardonnay battonage is an excellent white wine with elegant creamy aromas. Its smoothie taste and harmonic acidity are pairing with the scoglio seafood pasta. The citrus fruit aromas highlight the scampis, a  buttery texture makes beautiful complex with the garlic parsley clams. Enjoy! 🙂

9. Balassa winery Nyulászó Furmint + Smoked salmon & avocado sushi and maki rolls

Which wine 4 today? Furmint is a really great variety from Hungary, let me show you an excellent dry wine from Tokaj wine region from Balassa winery. The winemaker could study from the best winemakers from the region and he has high class vineyards. Thanks to the soil this wine has nice lively acides and the clima made it so beautiful,  you can taste several yellow dry fruits, apricot aromas, the texture is creamy. 8. Hernyák Estate Sauvignon blanc + Roasted pheasant breast with vanilla and pears

Which wine 4 today? The Etyek-Budai wine region is the Hungarian Champagne, where the chalk vineyard soil gives beautiful body to the wines. On Hernyák Estate father and son grow great wines and make excellent spirits for 10 years already. Sauvignon blanc is one of the favourites from this winery with the nice acids, what come from the limestone vineyards. The roasted pheasant breast with vanilla and pears is pairing with this fresh dry white wine so much, by highlighting the creamy and ginger aromas in the plate. Enjoy! 🙂

7. Varsányi Cellar: Riesling Italian + Creamy broccoli soup with toasted pine nuts and Parmesan

Which wine 4 today? I would like to recommend a beautiful Hungarian white wine from Eger region with Creamy broccoli soup with toasted pine nuts and Parmesan. The winery is Varsányi and the variety is Riesling Italian. Since 3 generations this family is continously growing wines on the North part of the country. They have white, red and rose wines as well. High quality for friendly price. Belive me! Sometimes a bottle costs only around 1 euro, but the pleasure is much more! This Riesling Italian dry white wine has nice acides and spring forest flower aromas, what match so much the toasted pine nuts and the Parmesan loves so much its acids. Enjoy! 🙂

6. Sauska winery Cabernet franc + Yorkshire grill beef steak

Which wine 4 today? I would like to recommend Yorkshire grill beef steak with a really nice Hungarian red wine from Villány region. The winery is Sauska and the variety is Cabernet franc. It has lovely chocolate and burned wood aromas, the grape provides great match with the roasted meats and mushrooms, so for this plate, the pairing is really complex. The winemaker left it 15 months aging in 80% new French oak barrels, what made this wine so beautiful. If you are lucky, you could find a few bottles of it on the market, generally this is a fab winery, so you cannot make mistake with any of their wines. Enjoy! 🙂

5. Bock winery Merlot + Honey and orange roast duck

Which wine 4 today? I would like to recommend Honey and orange roast duck with some rosemary. The pairing wine is Merlot from Bock winery, Villány wine region from the south part of Hungary, close to Croatia. This variety shows agreable soft and silky tannins, red berry taste, some black cherry and raspberry aromas. The fermentation was in tank, then got 1 year barrel aging. This round, full bodied great wine with smooth and velvety texture makes beautiful match with this  lovely roasted poultry food. Enjoy! 🙂

4. Hilltop winery Woodcutter + Grilled rosemary and sesame chicken with vegetables

Which wine 4 today? I would like to recommend a really healthy and light plate: grilled rosemary and sesame chicken with vegetables. The pairing wine is Woodcutter from Hilltop Neszmély winery, from the north part of Hungary, Neszmély wine region. The variety is Cserszegi Fűszeres,  it is a hybrid between the Irsai Olivér and Roter Traminer, that is why this reductive white wine is fresh, with spring flower fragrance and beautiful fruity taste. It has lovely spicy aromas with a harmonious acids. Enjoy! 🙂

3. Oremus winery Mandolás Furmint + Truffle risotto

Which wine 4 today? I would like to recommend a beautiful oak barrel aged wine from Tokaj wine region from the East-North part of Hungary. Oremus winery is located in the middle of the region, has a lot of kinds of vineyards, so their wines can show big difference depending from the selection. Today I choose a Furmint quality dry wine with the name of Mandolás (in Hungarian it is similar to almond) what comes from the block and the same time has beautiful aged oak and almond flavors. Good name and excellent wine. It has harmonious acids and good balance with the sweetness. I love so much its amazing honey and apricot smell with the creamy structure in sip. The matching food is Truffle risotto. Enjoy! 🙂

2. Gál Tibor winery Pinot Noir + Roasted lamb

Which wine 4 today? I would like to recommend a great light red wine from Gál Tibor cellar from Eger wine region from the north part of Hungary. This region is around 1 hour far from the capital, Budapest and famous about the 4 varieties blended red wine, named Blood of the Bull. This Pinot noir has beautiful sour cherry, undergrowth smell, its acids liveliness makes it an excellent match for Roasted lamb. Its tannins are soft and discreet; its subtlety also makes it a wonderful aperitif. 1. Nyakas winery Sauvignon blanc + Lemon butter salmon

Which wine 4 today? I would like to recommend a great Sauvignon blanc from Nyakas cellar. This winery is located in Etyek-Buda wine region on the North part of Hungary. They have 2 fab winemakers Mr. Ernő Malya and Ms. Beáta Nyúlné Dr. Pühra, I loved so much to work with them as they care so much about the wines and technology. Excellent flower and citrus bouquet make the magic in the glass.  Thanks to the  vineyards soil it has shows beautiful acids and minerally taste. The pairing food is lemon butter salmon.
